Desserts that will change your life!

Over the past few months over on my snapchat, I have had some huge success with the low-calorie dessert recipes that I have been posting! After many messages and email requests, I have decided to bring to BTF some more of our families very favourite desserts and treats that are not only DELICIOUS… they are also perfect for anyone wanting a treat that won’t affect their calorie budget for the day!!


Introducing…



Leah’s Berry Cobbler


Prep Time: 0:15

Cook Time: 0:40

Serves: 6

Difficulty: Moderate


500g frozen berries.

1tbs lemon juice

1tbs cornflour

3⁄4 cup(s) white self-raising flour (110g)

1⁄2 tsp ground cinnamon

1 medium egg yolk

1⁄4 cup(s) buttermilk (60ml)

1 x 3 second spray(s) oil spray

1⁄4 cup(s) Equal Spoonful


Instructions


Preheat oven to 180°C. Lightly spray a 4-cup (1L) capacity ovenproof dish with oil and place the dish on a baking tray

Combine berries, lemon and 1 tablespoon Equal in a saucepan over medium heat. Cook, stirring occasionally, for 3-4 minutes or until the berries thaw and the Equal dissolves


Blend the cornflour with 1 tablespoon of water in a bowl. Stir into the berry mixture. Cook, stirring, for 1-2 minutes or until the mixture boils and thickens. Once thickened, spoon the berry mixture into the prepared dish and set aside.



Sift the flour and cinnamon into a bowl. Stir in the remaining Equal along with the egg yolk and enough of the buttermilk to make a soft, sticky dough. Drop heaped tablespoons of the mixture over the hot berry mixture.


Bake the cobbler for 25-30 minutes or until golden. Remove from oven and set aside for 5 minutes to cool. Serve dusted with sifted icing sugar**


**instead of the icing sugar I used a sprinkle of the Equal to save me a few extra calories
